Oenococcus is a Gram-positive coccus that converts malic acid to lactic acid in fermentation. Malic acid contributes to a harsher taste in wine, and this malolactic fermentation softens the flavor of wine. Oenococcus is also very acid and alcohol-tolerant, surviving in the fermented brew longer than many other microbes.
